Rodrigo Olmedo, Chef Owner of "Ale'Roma Cucina", started his culinary career back in 1982 at "Ferrantelli Ristorante" in San Juan Capristano.
He became a Sous Chef at "Ferrantelli" new location in Dana Point in 1987 under the supervision of many Italian Chefs that come from the Old Country to bring the Italian flavors to the West Coast.
In 1991 was entitled as Chef in the brand new "Mangia Bene" in Laguna Niguel, and since then he is the mile stone in that restaurant.
His cooking is very versatile from the Old Italian School, to the contemporary influences from every side of the globe.
His major accomplishment is a very flavorful combination of ingredients that make the food truly italian and unique tasting like if you were visiting Rome.
His love for the soccer and italian food made him the proud owner of "Ale'Roma Cucina" that wants to bring the passion of the Sport marring with the amazing flavors of his Italy's delicious cooking.
